Bayley has developed a loyal following because of its fudge-like texture, toasted-nut sweetness, and anise spice character. The paste is dense and creamy, with well-distributed blue veins. Lonzino is a lesser-know cured meat (coming from the loin) that produces a lean and sweet cut—almost like prosciutto. Monti Verdi—a Vermont charcuterie producer that employs old world techniques—leaves a nice layer of fat to add softness and silkiness.
